4 large cucumbers, peeled and thinly sliced
½ lrg onion (if desired), sliced thinly

Vinegar Dressing:
White vinegar
4 T. sugar
pepper to taste


Cream Dressing:
¾ c. Half & Half cream
1 heaping T. sugar
1 heaping T. Miracle Whip
¼ c. vinegar
pepper to taste

Directions:

Soak thinly sliced cucumbers in a large amount of salt for at least 2 to 4 hours. (Mom would top with a plate and put something heavy on it to press the excess water out of the cucumbers.) Drain occasionally.

Vinegar Dressing: After draining cucumbers for the last time, sprinkle the sugar over them. Start with 4 tablespoons. Pour in vinegar to just cover cucumbers. Add onions if desired, pepper to taste, and mix well.

Cream Dressing: Mix dressing ingredients in a jar and shake to dissolve Miracle Whip. Add to drained cucumbers, add onions if desired, pepper to taste, and mix well.

Taste after mixing. If too sour, add sugar; if too sweet, add vinegar.
