Ingredients: 1medium yellow onion, finely chopped... 3 T lemon-herb finishing butter butter, most grocery stores have a couple of brands, look in butter section and/or fresh fish section... 4 cups frozen whole kernel corn, I prefer the white corn... 1 1/2 t natural kosher salt... 1/2 t pepper... 3/4 cup sour cream, divided... 3/4 cup of ole Fresco Authentic Mexican crumbling cheese, crumbled and divided... 2 green onions, thinly sliced...

Directions:Chop the onion, pre-heat large sauté pan on medium-high, 2 or 3 minutes... Place the butter in pan, add onions, cook 3 minutes or until onions are tender... Stir in corn, s&p, cook 5 minutes, stirring occasionally, be sure corn is hot and tender... Transfer this mixture to a food processor, add 1/2 cup sour cream and 1/2 cup crumbled cheese... Pulse until desired consistency... Spoon mixture back into the sauté pan, heat for 3 or 4 minutes or until mixture thickens a little, stir in rest of sour cream, top with the sliced green onions and remaining 1/4 cup of cheese....
