1 T. butter
1 T. minced garlic
1 jalapeno, seeded and chopped
1 c. unsweetened almond milk
¼ c. heavy cream
3 oz. cream cheese
4 oz. can green chilis
1 tsp. chili powder
1 tsp. cumin
½ tsp. onion powder
1 ½c. shredded cheddar cheese, divided
5 c. shredded chicken

In a 12 in. skillet, over med. heat melt the butter, add the garlic and jalapeno and saute for 30 seconds.
Add the almond milk, heavy cream, cream cheese, undraind chilis, spices and 1 c. of the cheddar cheese. Whisk mixture until smooth and cheese melts.
Stir in shredded chicken and top with remaining cheese. Reduce to low heat, cover and simmer 10 minutes.
Garnish with chopped green onions, jalapeno slices or avocado.
