4 lobster tails (5 to 6 ounces each), thawed
¼ c. cold butter, cut into thin slices
Salt & Pepper to taste
Lemon wedges
Clarified butter (recipe in This and That)

SNIP: Using kitchen scissors, cut and remove a 2-inch wide rectangle from the topshell of each lobster tail.

LOOSEN: Pull away the shell's edges to release the meat.

SEPARATE: Gently pry the lobster meat loose from the bottom shell, keeping it attached at the tail end. Let the meat sit on top of the shell.

BROIL: Line butter slices along the meat. Broil the lobster tails 5 - 6 inches from heat until the meat is opaque, 5 - 8 minutes. Season with salt and pepper; serve with lemon wedges. Clarified butter is optional.
