1 can Salmon
¼ cup Onion, chopped - optional
¼ cup Corn Meal Mix
1 Egg, beaten

Directions:
Directions:
Open Salmon and drain thoroughly; pour into medium bowl and break apart and get out any bones that you can. Add the chopped onion, cornmeal mix and egg and mix well - I do this by hand. shape into patties and place in a hot cast iron skillet with a good amount of oil. Cook until nice and brown and then turn and do the same on the other side. Lay on paper towels to drain a little bit.
