2 Chicken breasts, butterfly cut into 4 pieces
2 T oil
2 T red wine vinegar
3 cloves garlic minced
1 13.75 oz can quartered artichoke hearts in water, drained
1 small jar sun dried tomatoes, chopped
1 head of kale, chopped
1 C heavy cream
Salt and Pepper
Parmesan cheese

Directions:
Directions:
Season both sides of chicken with salt and pepper and add to hot pan with oil. Cook for 6 minutes until brown and then flip. Cook for an additional 6 minutes. Remove from pan and set on plate.

Add red wine vinegar to deglaze the pan and cook for one minute. Add garlic, artichoke hearts, tomatoes and cook for 3 minutes.

Add kale and cream and cook until kale is wilted.

Take chicken and tuck in. Add any resting juice fromplate. Put lid on and cook for an additional 7 minutes. Take lid off. If needed, add more cream.

Sprinkle with cheese.
