4 Ripe plantains- yellow skinned
3 cups Vegetable oil
Salt

Directions:
Directions:
Cut off the ends of each plantain
Slit the skin lengthwise and peel off
Discard ends and skin
Cut fleshy part of plantain into small round pieces each about a quarter of an inch thick
Optional- Sprinkle plantains with a dash of salt
Heat vegetable oil in large frying pan or skillet over medium heat
Deep fry plantains in vegetable oil until golden brown, flipping sides as necessary
Remove plantains from oil with slotted spoon and transfer to paper towel lined bowl
Allow to cool
Serve alone or with rice, beans, stewed beef or even scrambled eggs
