This is my mother-in-law's recipe. It is a very light bread pudding, unlike the heavy ones you usually find. The lemon sauce is a great topping and is also very good on blueberry pancakes.

2 c. bread cubes
4 c. scalded milk
1 tbsp. butter
1/4 tsp. salt
3/4 c. sugar
4 eggs, beaten
1 tsp. vanilla
raisins (optional)

Lemon Sauce

1 egg
A walnut size lump of butter
2 rounded tbsp. flour
dash of salt
scant c. of milk
scant c. of water

Directions:
Directions:
Preheat oven to 350ºF. Soak the bread in the milk for 5 minutes. Mix together the rest of the ingredients and add to the bread and milk. Pur into a greased baking dish. Bake in a pan of hot water until firm, about 50-60 minutes. While pudding is baking, prepare lemon sauce. Combine sauce ingredients and cook over low heat, stirring almost constantly, until nicely thickened. Remove from heat and add 1 tsp. vanilla and 1 tsp. lemon extract.
