1 package corn muffin mix and milk, as label directs
1/2 cup grated sharp Cheddar cheese
6 slices crisply cooked and crumbled bacon
1 egg

Directions:
Empty corn muffin mix into a medium mixing bowl. Stir all but 1 tablespoon of the cheese into the muffin mix. Stir all the bacon into the muffin mix. Add the egg and milk, following the label directions (on the muffin mix packaging). Pour batter into a greased and floured 8-inch square baking dish. Bake at 400° for 15 minutes. Sprinkle the remaining cheese over the top of the muffins and bake for 10 minutes longer, or until cornbread browned and firm.
