1 # dried pinto beans
water
3 # boneless pork butt
1 large onion, chopped
3 cloves garlic, minced
2 T chili powder
2 T ground cumin
1 tsp dry oregano leaves
2 - 4 oz cans diced green chilies
salt
1 -2 , 8 oz pkgs torilla chips or corn chips

Directions:

Sort and rinse beans; place beans in a large bowl, cover with water and let soak overnight.

Trim and discard excess fat from meat; cut meat into 2 inch chunks. Place in large dutch oven or crockpot. Brown meat, a few pieces at a time, cook until browned on all sides. Add onion and garlic, then cook, stirring occasionally, until onion is limp. Stir in 6 cups of water and chilies. Drain beans and add to meat mixture. Bring mixture to a boil, cover, reduce heat and simmer until beans are tender to bite and meat shreds easily. Add salt to taste. For thicker consistency cook uncooked til liquid absorbed.

To serve; place tortilla chips in a wide soup bowl.
Spoon pork-bean mixture over the top. Top with shredded lettuce, green onions, sharp cheddar cheese, tomatoes, sour cream, fresh cilantro, salsa, etc.
