1 Package simply potato shredded
9 Eggs
3 Slices Bacon
3/4 cup flour
1/4 cup green onion (sliced)
4 cloves garlic (minced)
Shredded Cheddar Cheese
Salt
Pepper

Cook bacon. Remove bacon from pan. Cook garlic in bacon grease for 1-2 minutes.

Scramble 8 eggs with sliced green onions. Season with salt and pepper. Throw in pan with garlic and cook.

Empty shredded potatoes into mixing bowl. Add remaining egg, flour, and 1/2 cup of cheese. Season with salt and pepper.

Use 4" bowl (we used our salad bowls) and cut a piece of saran large enough to go over edges of bowl.

Add 1/2 cup potato mixture to bowl. Use the back of a spoon to smooth mixture a little ways up bowl lip.

Add some egg, half a piece of bacon, and sprinkle cheese into center of bowl.

Lift sides of saran and press potato into a ball. You can spin the saran to make a nice ball.

Once all potato mixture has been used, place the balls in refrigerator for 20 minutes. Set oven to 375.

Place potato balls on a pan (we used a big cast iron skillet with oil) and bake for 35-45 minutes or until potato is crispy brown.

The number of eggs we used seemed to be a bit much. This is a Japanese recipe and they have much smaller eggs. I would recommend using 6 or 7 eggs in the scramble.
