2 tablespoons olive oil
½ an onion chopped
3 tomatoes diced
¼ cup fresh basil chopped
6 eggs
salt and pepper to taste

Directions:
Directions:
Heat olive oil on medium heat in a nonstick skillet. Add the onions and cook until translucent and soft. Add the tomatoes and cook until the liquid has evaporated. Whisk the eggs in a bowl until well blended. Season with a little salt and pepper. Add the eggs and basil to the tomato and cook over medium heat, stirring constantly, and scraping from the bottom of the skillet.
