Ingredients:  
4 Medium New Potatoes (about 2 lbs.)
Large Onion, finely chopped
2 Tbsp. Butter
Lb. Smoked Sausage, sliced 1/2" thick
Tbsp. Dijon Mustard
1/2 tsp. Salt
1/2 cup Whipping Cream
2 Tomatoes, chopped

Directions:
Directions:
Peel & cut Potatoes into 1" slices
Cook in Salted Water about 30 minutes, until a knife goes through easily
In large pan, cook Onion in Butter until soft
Add Sausage, cook, stirring often until lightly brown
Mix in mustard, Salt & Cream, bring to boil
Lightly mix in Tomatoes & Potatoes until heated, 3-5 minutes
