2-1/2 c flour
1 c sugar
1-1/2 tsp cinnamon
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

2/3 c vegetable oil
1/2 c milk
2 lg eggs, slightly whisked
2 tsp vanilla

3/4 c toasted pecans
1-1/2 c frozen peaches, chopped
3/4 c carrots, grated

Directions:

Pre-heat the oven to 350°F
In a large bowl mix the first 6 ingredients.
Add the next 4 ingredients one at s time, mixing just to incorporate.
Add carrots, peaches, and pecans mixing just to incorporate.

Pour into your prepared loaf pan ( I used 3 slots in my Pampered Chef stone pan) - I cover the pan ports with Crisco and dust with a sugar / cinnamon mixture.

Bake for 55 to 65 minutes; wooden skewer should come out clean (approx 209°F internal temp).
