1 1/2 c milk
1 c pumpkin puree
1 egg
2 T vegetable oil
2 T vinegar
2 c all-purpose flour
3 T brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp allspice
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt

Directions:
Directions:
In a large bowl, mix together the milk, egg, oil and vinegar. Set aside.

In a separate bowl, combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt.Stir dry ingredients into pumpkin mixture just enough to combine.

Heat lightly oiled griddle at medium-high heat. Pour or scoop batter onto griddle, about 1/4 cup for each pancake.

Serve warm with butter and pure maple syrup
