4 egg
Juice and grated zest of 1 1/2 lemons
1 1/2 c sugar
1 tsp cream of tarter
1 cup cream

Directions:
Directions:
1) Separate eggs. Beat egg whites until foam- add cream of tartar and beat till very stiff - add 1 cup of sugar slowly and carefully and beat until glossy, Spread in a buttered pyrex pie pan and bake at 375 for 20 min and the 300 for 40 min. Remove top and cool,

2) Beat 4 egg yolks till lite, add lemon zest and juice and add 1/2 cup sugar

3) Cook in double boil until thick. Cool.

4) Whip cream till very stiff

5) Spread 1/2 whipped cream on on pie

6) Spread the lemon filing on top of that

7) Add the rest of whipped cream

8) Put the top on it.

9) Chill 12 hours.


- variation “Lily’s Angel Pie” mix the whipped cream and the lemon filling instead of layering.
