3 cups water
3 Tbsps. lemon juice
7½ cups hulled large strawberries (about 3 heaping pints)
2 Tbsps. cornstarch
2 Tbsps. water
⅓ cup granulated sugar
Crême fraiche, Devon cream, or sour cream & a mint leaf (optional)

Directions:
In a medium saucepan, bring the 3 cups water, the lemon juice & berries to a boil. Reduce the heat & simmer, covered, 5 minutes. With a slotted spoon, remove berries. Transfer to a food mill, food processor, blender or a sieve to puree. Set puréed berries aside; return saucepan to the heat.

Blend together the cornstarch & 2 Tbsps. water. Whisk this mixture & the sugar into the hot liquid; cook until sugar dissolves & liquid thickens slightly. Remove from heat, add puréed berries & chill. Taste & adjust sugar & lemon juice when cold. Serves 6 to 8.

This recipe belongs in the in the dessert section but wouldn't fit.
Strawberry puree with tart lemon highlights. Serve in stemmed glasses or pretty bowls with a dollop of crême fraiche for a light dessert.
