1 1/2 c. sugar
1 c. buttermilk
1/2 c. Bisquick baking mix
1/3 c. butter or margarine, melted
1 tsp. vanilla
3 eggs

Directions:
Heat oven to 350º. Grease pie plate, 9 1/2 x1 1/4-inches. In a large bowl, combine all ingredients in order given. Beat until mixture is smooth - 30 seconds in blender on high speed, or 1 minute with hand beater. Pour mixture into pie plate. Bake approximately 30 minutes, or until knife inserted in center comes out clean. (High altitude 3500 to 6500 feet, bake 30 to 35 min.) Cool 5 minutes. Serve with mixed fresh fruit if desired.
