1 cup extra virgin olive oil
1/4 cup Balsamic vinegar
1/2 cup vegetable oil
1/2 teaspoon red pepper flakes
1/2 teaspoon oregano flakes
1/2 teaspoon crushed basil
1 teaspoon of garlic powder
1/2 tablespoon coarse salt (regular sale is ok, but cut back to 1/2 tsp)
1/2 cut orange juice

Wish above ingredients for a few seconds and pour over vegetables cut lengthwise about 1/16" - 1/4 inch thick (eggplant, green squash, yellow squash, green & red peppers, scallions, asparagus etc).

Marinate overnight, after grilling, pour remaining marinade over grilled vegetables
