1 large red onion - roughly chopped
1 medium eggplant - cubed
2 medium zucchini - roughly chopped
1 medium green pepper - roughly chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 lb mushrooms (2 packages sliced)
2 garlic cloves
2 tablespoon's chili powder
1-3/4 cups reduced sodium diced tomatoes (28 oz can)
1 can pink beans, drained & rinsed

Preheat oven 400 degrees

On baking pan, place onion, eggplant, zucchini, bell pepper - lightly brown - 45 minutes

On stovetop: add very little olive oil, saute mushrooms until liquid is gone; stir in garlic and chille powder - cook 1 minute; pour in tomatoes, beans, bring to simmer - 20 minutes; then stir in cooked veggies for 10 minutes
