2 medium carrots
½ pound daikon,peeled
½ cup rice vinegar
¼ cup sugar
1 tsp. salt

Directions:
Directions:
Cut carrots and daikon into ⅛" matchsticks with mandoline or julienne blade of food processor. Whisk together rice vinegar, sugar & salt until sugar is dissolved, then add vegetables & toss to combine. Let stand, tossing occasionally, until wilted, about 15 minutes.
