Puffs:
-2 cups water
-1 cup butter
-2 cubs flour
-8 eggs
-Pinch of Salt

Cream:
-2 packages of instant vanilla with 1-3/4 milk
-2 pints heavy cream (add 2 tsp vanilla and 2 tablespoons sugar)

Directions:

Puffs:
-Heat water, salt and butter in pot to boil
-Add flour, stir vigorously over low heat until mixture forms ball - remove from heat
-Add ONE egg (beat each one) at a time, mix well with each egg
-Drop one heaping tablespoon onto ungreased cookie sheet for approximately 30 - 40 minutes (golden brown)
-When completely cooled, cut each puff through center and fill with cream mixture, sprinkle with confectionery sugar and serve immediately

Cream:
-Add 2 packages of instant vanilla pudding and add 1-3/4 milk and mix well
-In separate bowl, mix heavy cream with 2 teaspoons of vanilla and 2 tablespoons of sugar - whip to make whip cream
-Fold whip cream into pudding

You can add small chocolate chips to pudding mixture!

Pistachio pudding is also so delicious!
