12 ounces BBQ pork, slivered
1 mango, slivered
1 cup snow peas, slivered
1 cup bean sprouts
½ cup green onions, slivered

Dressing:
2 Tbsps. lime juice
2 Tbsps. seasoned rice vinegar
2 Tbsps. vegetable oil
1 tsp. Asian sesame oil
1 Tbsp. hoisin sauce
1 Tbsp. soy sauce
½ tsp. grated lime zest
salt to taste

Garnish:
3 cups baby spinach
1 cup crispy chow mein noodles

Directions:
Directions:
Combine pork, mango, snow peas, bean sprouts and green onions & toss. Whisk together lime juice, rice vinegar, vegetable oil, sesame oil, hoisin, soy sauce & lime zest. Season with salt to taste.

Toss ¾ of dressing with salad. Place spinach on a platter; toss with remaining dressing & place salad on top. Surround with chow mein noodles.

You could use a rotisserie chicken instead of the BBQ pork, skin removed. This is a really good dressing!
