⅓ cup lime juice
1 shallot sliced thin
2 Thai chiles, stemmed, seeded, & minced
(could use jalapeno in a pinch)
1 garlic clove, minced
½ tsp. salt
1 to 2 Tbsps. sugar (optional)
1 Tbsp. fish sauce
1 honeydew melon, peeled, halved, seeded and cut into 1½" chunks (6 cups)
5 Tbsps. chopped fresh cilantro, divided
5 Tbsps. chopped fresh mint, divided
5 Tbsps. salted dry-roasted peanuts, chopped fine, divided

Taste the melon. If it is very sweet, omit the sugar.

Combine lime juice & shallot in a large bowl. Using mortar & pestle, mash chiles, garlic & salt to a fine paste. Add this chile paste, sugar if using, & fish sauce to lime juice mixture & stir to combine.

Add honey dew, ¼ cup cilantro, ¼ cup mint, & ¼ cup peanuts & toss to combine. Transfer to shallow serving bowl. Sprinkle with remaining 1 Tbsp. each cilantro, mint & peanuts.
