12 oz Yukon gold potatoes
Whole garlic clove
1 T butter
2 T Creme Fraiche or Sour Cream

Directions:
Directions:
Dice potatoes into 1/2 inch pieces.
Place potatoes and whole garlic in medium pot. With water to cover potatoes.
Add salt. Bring to boil and cook till tender. Drain potatoes reserving 1 cup of the water. Can remove the garlic clove if don’t want too much of a garlic flavor.
Add butter and creme fraiche and mash potatoes until smooth. Add a splash of the reserved potato liquid as needed. Season with salt and pepper.
