Classic French Bread Dough
1 ⅓ c. water (302 g)
2 t. butter
4 c. bread flour (480 g)
5 t. sugar
1 ½ salt
4 t. yeast

Directions:
Directions:
Using dough cycle in bread machine or stand mixer, mix dough in typical order.

Break small pieces off (approx. 30 g) and flatten in hand, working to smooth. Place 3-4 slices of pepperoni on each piece. Wraps ends and edges around and pinch to seal tightly. Placed on parchment paper or greased sheets. Cover and let rise 30 minutes.

Egg wash:
Beat 1 egg and 1 T water.

Brush rolls with egg wash and bake at 400º for 15-20 minutes until golden brown. Place warm rolls in paper bags or cool on wire racks. Freezes well.
