1 1/4 c oat flour
1 t baking powder
1/4 t baking soda
1/2 cup Sugar
2 eggs
3 T applesauce
3 T unsalted butter melted
2/3 cup Greek plain yogurt
1 t vanilla

Add ins:
1/2 cup shredded unsweetened coconut
3 T chia seeds
1 cup fresh blueberries
2 t vanilla

Directions:

Whisk together all dry ingredients. Combine all wet ingredients. Add to dry and mix well. Fill 12 muffin cups equally. Bake 400 for 16-17 minutes.
