2 T. extra virgin olive oil
5 oz. pkg baby spinach
8 large eggs
2 T. breadcrumbs

Directions:
Directions:
Preheat oven to 450º. Heat the olive oil over medium high heatl in an oven proof skillet. Add the spinach and cook, stirring, until wilted, about 4 minutes. Stir in salt and pepper to taste. Remove from heat. Whisk the eggs, breadcrumbs, ¾ cup of water and ½ tsp salt in a large bowl. Add the egg mixture to the skillet and stir. Bake until the frittata is set, about 15 minutes. Serves 4.
