2 yellow onions, peeled and cut
3 tablespoons unsalted butter
1 tablespoon olive oil
1 1/2 cup beef stock/broth
6 boneless pork chops
salt and pepper to taste
1/2 teaspoon dried thyme
garlic powder
1 1/2 tablespoons all purpose flour
6 slices provolone cheese

Directions:
Directions:
Preheat oven to 400š. Melt butter and olive oil in large cast iron skillet over medium heat. Add sliced onions and sauteč for about 5 minutes until golden brown. Remove onions from the skillet. Salt and pepper the pork chops and place in skillet. Cook approximately 3-4 minutes on each side. Once done remove pork chops and add the flour to the skillet and stir. Add beef stock to make a gravy. Return the pork chops back into the skillet.
Let simmer for a few minutes then top each pork chop with a slice of provolone cheese. Cover skillet and allow cheese to melt. Before serving, spoon some of the stock and onion mixture over the top of the cheese.
