2 cups uncooked rice, cooked and cooled
2.5 T oil
4 T soy sauce
2 t ginger
3 t garlic or 3 cloves
2-4 C assorted vegetables: peas, carrots, onion, mushroom peppers etc.
fish sauce or oyster sauce
1 can pineapple tidbits

Optional:

3-4 eggs
Capers taste good in this as well

Directions:
Directions:
Add oil to fry pan and fry the vegetables, garlic, ginger and half the soy sauce.
When cooked, put into a large pot.
Cook eggs in fry pan. Scramble, stir and season with salt and pepper.
When done, put into the large pot
Turn the heat up and add rice.
Cook, stirring every few minutes.
Add rest of soy sauce, fish sauce (to taste) and pineapple.

Quick, easy and tasty. Can add leftover chicken or just about any kind of meat as well.
