2 cups chopped fresh baby spinach 8 slices of bread-white or wheat crust removed. Cooking spray 8 large eggs 2 oz. goat cheese 2 tbsp fresh chopped chives

Directions:
Preheat oven 350 degrees, combine spinach ans 2 tbsp water in a micro safe bowl cover and cook 2-3 min. Roll bread slices to very thin, Spray cooking oil on one side and form a bowl shape. place on baking sheet oil side down. Drain spinach put 1/2 into bottom and crack egg on top. Season with salt/pepper. Top with remaining spinach sprinkle goat cheese on top Bake 15 min. Serve with chive garnish.
