2 Lb Ground Pork
2 Lb Ground Beef
1 Cup Milk
⅔ Cup Bread Crumbs
½ Cup shredded Parmesan or Asiago Cheese
2 Eggs
1 Large Onion (finely diced)
6 Cloves Garlic
6 tsp. Dried Parsley or 1/3 cup of fresh Parsley (chopped)
4 tsp. Salt
4 tsp. Dried Oregano
2 tsp. Dried Basil
2 tsp. Black Pepper
1 tsp Red Pepper Flake
1 tsp. Anise Seed

Directions:
In small bowl mix bread crumbs and milk and let soak for 15 minutes. Add 1 Tbsp oil to a pan and sweat the onions and garlic until they begin to turn translucent. Whip the eggs to combine. In a large bowl add the onion mixture, bread crumb mixture, eggs, cheese, and all herbs and spices and mix until combined. Add pork and beef and mix by hand until combined. Do not over mix. Allow the meat mixture to chill in the fridge for at least an hour for flavors to combine.
Preheat oven to 425º F. Roll the meat mixture into 1½ inch balls and sear each meatball on at least 2 sides. Either bake the meatballs at 425º F or simmer in a marinara sauce for 15-20 minutes until the meatballs are cooked through.
