Ingredients:  
Chicken Breast either grilled on a barbeque or stove top
Raw kale – massaged with salt and chopped and marinated in olive oil
Pistachios – or other nuts, for texture and flavour
Quinoa – to fill it out, add texture and nutty flavour (i made one cup as per directions on the box)
Red onion – for freshness
Cherry Tomatoes (cut in half)
Red Peppers diced
Avocado cut into chunks
Feta –crumbled

can also pretty much add any other vegies you like. I added celery and it added a nice crunch.

For the dressing all you need is olive oil and your favourite balsamic vinegar. I use black cherry balsamic and it is excellent. Have also had it with lemon balsamic.

Basically you just throw all the ingredients together and serve along side the grilled chicken. Even people who don't like quinoa or kale (Tom) love this salad. I had this salad at Steamworks in Vancouver and think I have done a decent job of replicating it. Enjoy

The secret to making raw kale really tasty is to massage it with olive oil and salt. This tenderizes the kale, and makes raw kale salads really delicious!
