For 1 cocktail:
½ cup fresh mint leaves plus mint sprig for garnish
1 ounce Simple Syrup (see Dacquiri recipe)
2 ounces white rum
1 Tbsp. freshly squeezed lime juice
4 ounces club soda, chilled

Directions:
Directions:
Add mint leaves and Simple Syrup to base of cocktail shaker and muddle until fragrant, about 30 seconds. Add rum and lime juice, then fill shaker with ice. Shake mixture until just combined and chilled, about 10 seconds.

Strain cocktail onto chilled Collins glass half-filled with ice. Add soda and using bar spoon, gently lift rum mixture from bottom of glass to top to combine. Top with additional ice and garnish with mint sprig.
