Cake:
3 eggs
1 c oil
2 c sugar
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2 c sifted flour
1 tsp vanilla
1 1/4 c nuts, chopped
4 c thinly sliced apples

Frosting:
2 - 3 oz pkgs of cream cheese
2 c sifted powdered sugar
2 T butter
1 tsp vanilla

Cake:

Preheat oven to 350º.

Beat eggs and oil together until foamy; beat in sugar. Combine soda, salt, cinnamon, and flour, mix well. Stir dry ingredients into egg mixture; add vanilla. Batter will be stiff. Mix in the apples and nuts. Turn into a greased 9 x 13 cake pan.

Bake for 50-60 minutes or until toothpick comes out clean.

Frosting:
Mix all ingredients in a bowl; beat with electric mixer until smooth. Spread over cooled cake.
