1 English cucumber, peeled and grated
2 c Greek yogurt
⅛ t cayenne pepper
2 cloves garlic, minced
2 T lemon juice, freshly squeezed
2 T fresh dill, chopped
½ sea salt
¼ ground black pepper

Directions:
Directions:
Grate the cucumber in a small bowl. Add ¼ t of salt to it and let sit for 10-15 minutes. This will help draw out the water from the cucumber. You can also squeeze the grated cucumber with paper towels or a clean white kitchen towel.

In a medium bowl, combine yogurt, cayenne, garlic, lemon juice and dill. Stir in the cucumber. Add salt and pepper. Adjust taste as necessary.

Refrigerate at least 4 hours before serving.
