1 pound raw shrimp (peeled and deveined)
½ teaspoon salt
¼ teaspoon pepper
2 red bell peppers seeded and sliced
2 tablespoons soy sauce
2 tablespoons fish sauce
2 cloves garlic finely minced or grated
1 tablespoon brown sugar
1 teaspoon chili paste
2 tablespoons lime juice
¼ cup shredded Thai or sweet basil
¼ cup minced scallions

Directions:

Preheat a wok or large frying pan over medium-high heat. Add 1teaspoon of oil. sprinkle salt and pepper on shrimp and sauté until they turn pink. Turn once. It will take about 60 to 90 seconds a side. Do not overcook.
Remove shrimp from pan and set aside. Add bell peppers to pan and sauté for 3-4 minutes until they start to soften. Mix soy sauce, fish sauce, garlic, ginger, sugar and chili paste. Add mixture to the pan and stir well. Add shrimp back to the pan and cook for 1 minute to warm the shrimp. Remove from heat. add lime juice, basil and scallions and server immediately.

How spicy the dish is will depend on the type and amount of chili paste you use. Can use hot sauce instead of chili paste. Good with rice or rice noodles
