Ingredients: 16 cups stuffing mix (I use one bag of cubed and one bag of crumbled) 2 cups chopped onions (3 med - lg) onions 2 cups (5-6 stalks) celery 1 stick butter 3 - 4 cups broth 2 eggs 1½ lb. crumbled sausage ¼ cup parsley 1 tbsp. sage 1 tbsp. thyme salt and pepper to taste

Directions:1. Melt 1 stick butter in a large skillet. 2. Sauté onions and celery until they are softened. 3. Add parsley, sage and thyme while cooking vegetables. 4. Remove cooked vegetables to a large bowl. 5. In the same skillet brown sausage until browned and cooked through. 6. Mix vegetables, sausage and broth together and bring to a simmer. 7. In a separate bowl beat the eggs and add the bread crumbs. Mix well 8. Pour breadcrumb mixture into the vegetable-sausage-broth mixture and mix well. Transfer to a 9x12 buttered baking dish and dot the top with butter. Cover and bake at 375º for 30 minutes, then uncover and bake until golden brown, about 30 minutes more. |
