16 cups stuffing mix (I use one bag of cubed and one bag of crumbled)
2 cups chopped onions (3 med - lg) onions
2 cups (5-6 stalks) celery
1 stick butter
3 - 4 cups broth
2 eggs
1½ lb. crumbled sausage
¼ cup parsley
1 tbsp. sage
1 tbsp. thyme
salt and pepper to taste

Directions:

1. Melt 1 stick butter in a large skillet.
2. Sauté onions and celery until they are softened.
3. Add parsley, sage and thyme while cooking vegetables.
4. Remove cooked vegetables to a large bowl.
5. In the same skillet brown sausage until browned and cooked through.
6. Mix vegetables, sausage and broth together and bring to a simmer.
7. In a separate bowl beat the eggs and add the bread crumbs. Mix well
8. Pour breadcrumb mixture into the vegetable-sausage-broth mixture and mix well.
Transfer to a 9x12 buttered baking dish and dot the top with butter.
Cover and bake at 375º for 30 minutes, then uncover and bake until golden brown, about 30 minutes more.

To make vegetarian omit the sausage and skip steps 4 and 5.

Additional add ins if desired:
1 cup dried cranberries, 2 granny smith apples, 1/2 cup nuts,
