4 c all-purpose flour
2 tsp kosher salt
2 c lukewarm water
2 tsp sugar
2 1/4 tsp instant yeast
2 T butter, room temp

Preheat oven to 425º.

In a large bowl, whisk together flour, salt, sugar and yeast. Add water and mix until combined.

Cover bowl with a clean towel and set aside in a warm area to rise, at least 1 hour.

Using two forks, punch down the dough, scraping it from the sides of the bowl as you go. Turn dough onto itself as you scrape. Using forks, divide into equal portions by pulling dough apart in the center and working your way out of the bowl.

Place each half into greased bowls. Leave dough to rise, uncovered, for 20-30 minutes. Do not rise in oven.

Turn dough onto greased baking sheet and shape into a round. Bake 15 minutes at 425º, then decrease heat to 375º, and bake another 15-17 minutes or until well browned. Turn loaves out onto a wire rack to cool. Let cool 10 minutes before slicing.
