1/3 cup shortening (butter or margarine)
1 1/2 cup self-rising flour*
3/4 cup sugar
3/4 cup milk
1 egg
1 1/2 teaspoons vanilla

(*If you use all purpose flour, you will need to add 2 1/2 teaspoons of baking powder and 1/2 teaspoon of salt. My suggestion is to use self-rising flour as stated above.)

Preheat oven to 375º
Spray with Pam or grease and flour a 9x9x2 inch baking pan; set aside.
Place shortening in a small mixer bowl. Add flour and sugar.
Add half the milk, the egg and vanilla.
Mix at low speed until blended. Beat 2 minutes at medium speed.
Scrape sides of the bowl. Add in the remaining milk. Beat 2 minutes more at medium speed.
Pour into the prepared pan.
Bake at 375º for 25 to 30 minutes or until a tooth pick inserted in the center comes out clean.
Cool on wire rack before frosting with desired frosting.

This is the easiest cake to prepare and very delicious.
A few Tips:
It works best to set out the shortening (butter or margarine), eggs and milk about 1 hour before you mix the cake. This assures that the shortening will mix easily with the eggs and milk. If you do not have time or you forget, it is still good.
Place the cake pan into the center of the oven so it will bake evenly.
After you take the cake out of the oven, and you remove it from the pan, let it cool on a wire rack before you frost the cake so the icing will not melt and run off.
If you use a glass baking pan, pyrex or corning ware, you can bake and serve the cake in the same pan. Clean up is much easier.
