2 lb squash cut up
2 c sharp cheese, shredded
1 medium onion, minced
½ stick butter
1 c mayo
1 package Ritz crackers
2 eggs, beaten
1 sweet pepper, diced, sautéed (optional)
1 jar pimentos (optional)
salt

Directions:
Directions:
•Boil squash until tender with a little salt in the water, drain
•Sauté onion and sweet pepper in ½ stick butter
•Mix ingredients together (except for crackers)
•Pour into a buttered casserole dish
•Bake at 350 degrees until toothpick inserted comes out dry (~20 min.). It should look firm.
•Add 1 sleeve of crushed Ritz crackers
•Return to oven for about 5-10 minutes, until toasted.
