12-15 chicken drumsticks (skin removed) or 3 chicken breasts (cubed)
5-7 cubed potatoes
1/4 cup fresh plain yogurt – this is the base for additional ingredients
5-7 tbsp of oil (plus some oil to coat the pan; can use canola or olive oil)
2-3 tbsp of fresh lemon juice
2 tsp salt
3 tbsp fresh crushed minced garlic
2 tbsp fresh ground ginger
2 tbsp fresh ground peanuts (plain peanuts)
2 tbsp fresh ground green (hot) peppers – (adjust based on your spice level)
1-2 tbsp red cayenne pepper powder (adjust based on your spice level)
2 tbsp chicken masala mix or garam masala or curry powder (found at Indian grocery stores)
2-3 tbsp ground dry ground coriander
1 tbsp ground cumin powder
1 teaspoon- turmeric
¼ cup of chopped fresh cilantro

Directions:

Mix all of the above in a large bowl, then add chicken, coating each piece. Preheat oven based on the following:

Chicken drumsticks – 425 degrees (bake for 1 hour to 1.15 hours) – skin removed

Cubed chicken breast – 375 degrees (bake for 30-40 minutes)

Potatoes – 425 degrees (bake for one hour)

Grease a glass cooking dish with a bit more oil, add chicken (if drumsticks, lay them flat in one layer).

If desired, place 1 cup cherry tomatoes, sliced bell peppers, and sliced onions on top of the chicken (not required, but do add some sauce to the mix).

Cover with foil and bake per #2 above. Turn once half-way through. Chicken should easily fall off the bone if using drumsticks when done.

Add fresh cilantro and green onions on top during the last five minutes of baking if desired.

If using drumsticks, remove the skin before marinating. Also, cutting slits into each piece helps with the marinating process.

You can also marinate the chicken overnight or for a few hours if you like.
