4 c peeled, diced potatoes (4 med)
2 c chicken stock
1 lg head broccoli, stalks removed, chopped
1 c milk
1 c cream
1 c grated cheddar
(or 6 slices American)
Tony's cajun seasoning
opt: chopped, cooked bacon
fresh, finely chopped chives

Directions:
Directions:
Cook potatoes in salted water, covered, til tender.
Combine chicken stock & broccoli; cooked, covered, 10 min.
Remove from heat, chop broccoli into broth.
Drain potatoes & mash about 1 cup. Add to soup.
Add remaining potatoes, milk, cream, seasonings.
Heat gently, not to boiling. Add cheese & stir gently.
Season again, if necessary.
Opt: stir in 1 tbsp butter,
add bacon & chives
top each serving with shredded cheddar
