Ingredients:  
1 pie crust, baked until golden brown.

2 cups milk
¾ c. cream of coconut
¼ c. cornstarch
⅛ tsp salt

Cook over moderate heat until it thickens, about 8 min.

In medium bowl, whisk 3 egg yolks.

Whisk in a little hot milk mixture, then whisk in rest of hot milk.

Cook over heat until thick & smooth, about 1 minutes.

Remove and add:
1 tsp vanilla
1 TB butter
1 cup coconut

Directions:

Pour into baked crust, top with whip cream or meringue.

Meringue:
Beat 3 egg whites until foamy

Add ¼ tsp cream of tartar
⅛ tsp salt.
Beat until foamy.

Add ⅓ cup sugar gradually while beating.

Spread over pie, make peaks with back of spoon. Bake 325° 12-15 min.
