Thaw steak, pat it dry with a paper towel. Place the steak on a baking rack on top of a cookie sheet.

Season the steak liberally with coarse salt and pepper - on both sides. Do one side first and then leave it for 10 minutes and then flip and do the other side.

Place it uncovered in the fridge for at least one hour and up to two days. Bring it to room temperature before cooking it (about an hour before you plan to BBQ it).

Oil the grill with a paper towel with tongs before you place the steak on the grill.
