½ c uncooked rice
1 c water
5 or 6 Vidalia onions, sliced
¼ c butter
1 tsp salt
1 c grated Swiss cheese
⅔ c half and half or evaporated milk

Directions:
Directions:
Prepare the rice according to package directions using 1 cup water. Preheat oven to 325º. Butter a 13x9x3 inch baking dish. Sauté the onions in the butter until clear. Combine the rice, onions, salt, cheese, and half and half. Spread the mixture in the prepared dish. Bake for 1 hour.

The side dish is yummy. The sweet Vidalia onion makes it almost like a dessert!
