¼ pt Water
5 ½ oz Caster Sugar
Juice and Zest of 1 Lemon
4 oz Gin
7 oz Tonic Water
5 Gelatin Leaves
Lemon and Lime Wedges

Directions:
Directions:
Pour the water and the sugar into a pan, bring to a gentle boil for five (5) minutes. Remove from heat and add the lemon zest. Let stand for 15 minutes. Pour into a measuring cup. Add the lemon juice, gin, and tonic. Top off with more tonic if it does not reach the 1 pint mark. Place the gelatin in a shallow bowl ad cover in water. Soak for four (4) minutes. Squeeze out the excess water, then whisk the gelatin into 1 oz of hot water. Stir into the lemon syrup until combined. Pour into a tin ring and allow to set in refrigerator for six (6) hours. To unmold, dip the tin in hot water for a few seconds. Turn out the jelly and fill the inner circle with lemon and lime wedges.
