1 tablespoon olive oil
1 chopped onion
2 chopped stalks celery
2 chopped carrots
1 whole chicken
2+ quarts of water
1 tablespoon salt
˝ teaspoon pepper
1 teaspoon fresh sage

Directions:
Directions:
Sauté vegetables in oil. Add chicken and water and simmer for 2+ hours until the chicken falls off the bone. Keep adding water as needed. Remove the chicken carcass from the broth, place on a platter, and let it cool. Pull chicken off the carcass and put it into the broth. Pour broth mixture into pint and quart mason jars. Be sure to add meat to each jar. Leave one full inch of space from the top of the jar or it will crack when it freezes as liquids expand. Place jars in freezer for up to a year. Take out and use whenever you make a soup.
