1 cup Cornmeal
1 cup Flour
2 tbsp Sugar
2 tsp Baking Powder
1/2 tsp Salt
1 cup Buttermilk, plus 1-3 more tbsp for consistency
1 Egg
2 tbsp Honey
2 Qt Vegetable Oil
10 Hot Dogs
10 Wooden Sticks

1. In large bowl, whisk together cornmeal, flour, sugar, baking powder and salt
2. Add buttermilk, egg, honey and 2 tbsp of oil to bowl and whisk thoroughly combined.
3. Set aside and rest for 10 minutes
4. Heat oil to 350º
5. Thread hot dogs on to wooden sticks. Pat dogs dry.
6. Stir batter. It should be able to thickly coat a spoon while also be fluid enough to slowly drip off. If too thick, add tbsp of buttermilk and stir. So another drip test. You can add up to 3 tbsp buttermilk
7. Pour batter into tall glass, filling 3/4 full. Dip dog into batter, gently twisting to coat the dog up the stick. Slowly pull dog out of batter, gently shaking off excess
8. Holding the coated dog by the stick, gently drop it into the oil, letting go before oil touches fingers. Cook for 3-5 minutes, using tongs to turn as needed. Transfer to paper towels.
