1 cup Butter, softened
7 Cloves of Garlic, minced
2 tbsp Fresh Rosemary, finely chopped
2 tbsp Free Thyme, finely chopped
2 tbsp Salt
1 tbsp Pepper
5 lb Ribeye Roast, trimmed
2 tbsp Flour
2 cups Beef Stock

Directions:

1. Preheat over to 500º F
2. Mix together butter, garlic, herbs, salt and pepper in a bowl until evenly combined
3. Rub herb butter all over the rib roast, then place in roasting tray with a rack
4. Bake for 5 minutes per pound of meat, so 5 pounds would be 25 minutes
5. Turn off heat and let the rib roast sit in oven for 2 hours. DO NOT OPEN DOOR!
6. After 2 hours, remove roast from pan and pour the pan drippings into a saucepan over medium heat.
7. Add flour, whisking until there are no lumps, then add beef stock, stirring and bringing sauce to a boil
8. Remove from heat and strain the sauce into a gravy dish
9. Carve the prime rib into 3/4 inch slices
